Rhubarb Cake

 1/2 C. shortening or margarine
1 C. sugar
2 eggs
1 tsp. vanilla
1/2 C. milk
Mix the above ingredients and stir in dry ingredients:
2 C. flour
1 tsp. each baking powder & baking soda
1/2 tsp. salt
Then stir in 3 or 4 cups of cut up rhubarb

Pour in greased oblong pan. Sprinkle with brown sugar, if desired. Bake 40 min at 375. Cut in sqs and top with cool whip or vanilla ice cream.
