I've started buying those roasted chickens (already cooked) at Safeway because I can get several meals out of one. Costco's are cheaper but that's a half hour away. Anyhow, tonight I had about 2 cups of cut up chicken left and I found this recipe in my latest cookbook called Chicken Bake Salad. Or something like that. I had all the ingredients except shoe string potatoes and I haven't been successful at finding those. I looked at Safeway and QFC both but I guess they were hiding.
Anyhow, you were supposed to top this casserole with the potatoes but I smashed a few saltines instead. The recipe has weird ingredients. Cut up celery and onion, 1/2 cup of cut up water chestnuts, 2 cups cut up chicken, 1/2 C. grated cheese, a tablespoon of lemon juice, salt, pepper. I think that was all. You mix the whole thing up with a half cup of mayonnaise. Top with crackers and bake at 400 for 25 minutes.
I have no idea what it's going to taste like so I'm calling it my casserole surprise. I do like that you just mix it all up and throw it in the oven. I think I'll bake some corn muffins to go with it.
