Well, this was an interesting recipe. It's the first one in the Weight Watchers Favorite Recipe Book I have in my book collection. It says 'serving for one' but really I think it's enough for two people. I made two variations since I had to bake it for 35 minutes. Wanted to see which type I liked more. The one on the left called for a small apple. The one on the right called for 2 tablespoons of raisins. I've been taste testing the blue cup and it's pretty good.
1 slice white bread,cut into cubes
1 small apple, cored,pared, and diced (or 2 tablespoons raisins)
1 cup skim milk (I used instant milk and probably shouldn't have or I could have used less.
1 egg
1 tsp. granulated sugar
1 tsp. vanilla
1/4 tsp. cinnamon
dash nutmeg (I didn't have any)
spray 2-cup casserole with cooking spray. Arrange bread cubes & apple in dish.
In separate bowl combine milk, egg, sugar, & vanilla. Beat until smooth. Pour over bread mixture. Sprinkle with cinnamon and nutmeg.
Bake 35-40 minutes (I should have gone for the 40) Remove from oven and let stand 15 minutes.
I think mixing the cinnamon in with the milk & egg mixture might have worked just as well.
I'll definitely try it again someday.
