It's 11 pm. I went to bed an hour ago and then I couldn't get to sleep. This happens every now and again. Usually, though, there's no way I can stay awake until 10. I'm lucky if I make it to 8:30. After an hour I decided to get up and see if I won mega. And guess what! I didn't. Only got one number so I won zip. I see that somebody got it, though.
I saw a neat youtube video tonight.. The woman's website was called southernfrugalmomma. She discussed the cost of eggs and how to save money. She demonstrated four different things you could use when baking when the recipe called for eggs. She tested them out and had her kids taste test each item.
The first thing she made was brownies. She was using a box mix where you add oil, water and eggs. She substituted the eggs with unsweetened applesauce. 1 egg= 1/4 cup applesauce so she used 1/2 cup as it called for two eggs. Came out just dandy.
Next she used Jiffy corn meal mix (small box) to test out three other options. She was curious to see if it really worked.
She followed the directions on the box adding whatever it called for but in place of eggs, she used:
1st box: 2 tablespoons oatmeal & 3 tablespoons boiling water
2nd box: 1 tablespoon corn starch & 3 tablespoons water (not boiled)
3rd box: 1 tsp. baking soda and 1 tablespoon white vinegar. She did mention that you can't use a metal pan to bake in if you've used vinegar as it doesn't turn out well. You have to use glass.
All the cornbreads turned out fine but she preferred the corn starch batch the best.
So many interesting things on youtube. I often watch it in the evenings.
My to-do list for tomorrow includes baking up a banana bread. If I have any unsweetened applesauce in the panty, I may try it out.
I did a little rearranging again today. It's my hobby. I mainly just put various bins in different areas. Did manage to free up space in my frontroom closet. Before I went to bed, I happened to turn on the water in the kitchen sink and realized we had none. I asked the neighbor and she said someone's toilet overflowed so the manager turned off the water until a plumber can arrive. Hmmmm....
Tomorrow I'm going to do some more sewing and I'm pretty sure I'm going to pull out my rocks for painting. I sent for a new counted cross stitch on Amazon tonight. Used up the last of my gift card from my grandson. Excited to see the book. It's got 50 mini designs of masterpiece art. Mini meaning you use 2" pieces of aida cloth. That ought to be interesting.
Kind of looking forward to football and golf tomorrow too. Well, off to play some solitaire online now until Mr. Sandman pays me a visit.
