My monthly box of free food arrived today. This once a month delivery is always a delight. Today I got a big ole bottle of OJ, a gallon of milk, a bag of apples, two bunches of radishes, 2 cucumbers, 2 eggplants, 1 head of cauliflower, a pound of cheese, and a ton of canned goods -- including canned salmon, chicken, various veggies, applesauce, beans, etc. Oh, and a box of dry cereal, a pkg of spaghetti and macaroni pasta, and a box of oatmeal. All free and I appreciate it. Some of the items I share with neighbors. At least those I know I won't use or still have leftovers from the month before.
I've never liked cauliflower especially although it's okay raw. It was the one food that dad cooked when I was a kid and even the smell would make me gag. I tried giving away the eggplant but no takers so I went to google to read up on how to fix it. Actually, looks kind of tasty now. I peeled one and sliced it, put them on two cookie sheets and salted them. Will let sit for a half hour and then I intend to cook in the air fryer. Once theyr'e done, I'm going to top with tomato sauce and cheese. I don't have parmesan except in the green can it comes in and I don't have maranara sauce so tomato is going to have to do.
I remember my mother-in-law used to make this casserole with eggplant and I really liked it. I intend to look around and see what else I can make. I've got several cans of salmon and chicken now too so I may attempt a pizza with the chicken but I'll have to go buy that white sauce it requires. Pesto I think it's called.
I've been pretty busy so far this morning and it's not even noon yet. I took a bag of embroidery thread down to my sister along with my bottle of B vitamins since I can't take them now. Still think it's odd that my B12 blood test came back too high. Oh well...
I gave my green rocks another coat and hope to finish up my little cactus pot today or tomorrow. Should look something like this although I only painted about five.
I dug around in my bin that has batting and was very happy to find one piece I can use for my latest quilt. Thank you Patsy Lamberton! I had to sew another little chunk on to it to make it big enough but I'll work on that tomorrow as I also found the backing piece I want to use.
I made up a bowl of raspberry jello as I had all these little servings of fruit cocktail that came in these other free food deliveries that come once a week. I get four tv dinners but some are better than others. All the ones with fried rice have frozen fruit in one section and I don't like warm fruit so I popped them out and will use in jello. The broccoli secctions I mostly toss although I keep one now and then to add to baked potatoes. The fried rice section I dumped in a bowl (using 4 of the meals) so I can have one big batch and maybe add some meat with it or even scrambled egg. Yum.
I went to the library yesterday and picked up four audio books. One is the large book I'm reading now. Well, trying to get to. I figure I can listen to it while working a jigsaw.
Guess I'll drink my metamucil now and see about cooking up the egg plant slices. Sooner or later I have to tackle the job of cleaning out my computer files. I actually love doing stuff like that but it still intimidates me somewhat. Too afraid I'm going to delete stuff I shouldn't. I'm such a weenie sometimes.
